Grilled cheese in a pan requires attention - you have to watch it, press it, manage the heat so the outside does not burn before the inside melts. The air fryer handles all of that automatically. Set it and come back to a sandwich with evenly golden bread and fully melted cheese, every time.

Basic Method

Butter both outer sides of the bread. This is the same as the pan method - the butter is what produces the golden colour. Place the first slice butter-side down, add cheese, add the second slice butter-side up. That is it for assembly.

Preheat the air fryer to 190C / 375F for 2 minutes. Place the sandwich in the basket. Cook for 3-4 minutes, then carefully flip using tongs or a spatula. Cook another 3-4 minutes until golden on both sides and the cheese is fully melted. Total: 6-8 minutes.

One tip: put a small piece of baking paper under the sandwich to prevent any melted cheese dripping into the basket. Cleanup becomes much easier.

Bread and Cheese Options

Bread: white sandwich bread is the classic. Sourdough produces a better flavour but the uneven surface means less even contact and sometimes uneven browning - still good. Avoid very thick slices (over 2cm) as the inside does not toast before the cheese melts.

Cheese: cheddar melts well and has strong flavour. Mozzarella melts beautifully but is mild. A mix of cheddar and mozzarella (half and half) is the best of both - strong flavour plus satisfying melt and pull. American-style processed slices melt the most evenly but the flavour is bland.

Fillings Beyond Plain Cheese

  • Ham and cheese: 1-2 thin slices of cooked ham, cheddar. Classic, kids love it.
  • Tomato: thin slices of tomato add moisture - pat them dry or the bread goes soggy in the middle.
  • Pesto and mozzarella: spread a thin layer of pesto on the inside of both slices. More grown-up.
  • Bacon and brie: for weekend versions. Crisp the bacon in the air fryer first (8 minutes at 200C), then assemble.

Cooking Multiple Sandwiches

A 5.5-6 quart air fryer fits two standard sandwiches side by side. A 7+ quart fits three. For a family of four, run two batches. The second batch takes exactly the same time as the first - no adjustments needed. The first batch stays warm for 5-6 minutes while the second cooks if you tent them loosely with foil.
