Watermelon and mint is one of the most reliable warm-weather pairings available, and adding salty feta and a bit of acid turns a simple fruit combination into a genuinely balanced dish rather than just fruit salad.
Watermelon Mint Salad with Feta
Prep time: 15 minutes | Serves: 4 to 6
Ingredients
- 6 cups cubed seedless watermelon
- 1/2 cup crumbled feta
- 1/4 cup fresh mint leaves, torn or thinly sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp lime juice
- Pinch of flaky salt
- Freshly cracked black pepper, to taste
Instructions
- Arrange the cubed watermelon on a large platter or in a wide serving bowl.
- Scatter the crumbled feta and torn mint leaves evenly over the top.
- Drizzle with the olive oil and lime juice.
- Finish with a pinch of flaky salt and a few cracks of black pepper.
- Serve immediately, or within an hour - watermelon releases liquid as it sits, which can make the salad watery if assembled too far ahead.
Notes
Tear the mint rather than chopping it finely for this salad - larger pieces hold up better visually and don't bruise and darken as quickly as finely chopped mint.
Why This Combination Works
Watermelon's sweetness and high water content pair naturally with mint's cooling freshness, while feta's saltiness and lime's acidity keep the dish from tasting one-dimensionally sweet. It's a similar balancing principle to the citrus-fennel combination in our fennel frond salad, just built around a different fruit and a bolder cheese.
What to Serve It With
This salad works well as a side for grilled meat or fish at a summer barbecue, or as a light starter on its own. It pairs particularly well with anything off the grill that could use a cool, fresh contrast.
Variations
- Add cucumber: Thinly sliced cucumber added alongside the watermelon extends the refreshing quality of the salad.
- Balsamic finish: A light drizzle of balsamic glaze in place of or alongside the lime juice adds a different kind of sweetness and acidity.
- Spicy version: A thin slice or two of fresh jalapeño adds a bit of heat that plays surprisingly well against the sweet watermelon.
- Different cheese: Fresh mozzarella (torn into pieces) works in place of feta for a milder, creamier version.
