Oven roasted potatoes need 40-45 minutes at high heat plus parboiling time if you want them truly fluffy inside. Air fryer potatoes skip the parboiling, take 18-22 minutes, and produce a better crisp-to-fluff ratio because the circulating air hits all sides at once. It is a meaningfully better result, not just a faster one.

Which Potatoes Work Best

Floury or all-purpose varieties produce the fluffiest inside: Maris Piper, King Edward, Desiree, Yukon Gold. Waxy varieties (Charlotte, Jersey Royal) stay firm throughout and do not get the fluffy interior - they are good for salads but not roasting.

Cut size affects cooking time and texture. 3cm chunks give you the best fluffy-to-crispy ratio. Smaller than 2cm and you get mostly crust. Larger than 4cm and the inside is dense by the time the outside is crispy.

The Method

Preheat the air fryer to 200C / 400F for 3 minutes. Add potatoes in a single layer - slight overlap is fine but do not stack them. Cook for 18-22 minutes, shaking the basket twice (at 8 minutes and 15 minutes). They are done when golden brown and a fork goes through the centre easily.

Seasoning Options

  • Classic herb: rosemary, garlic powder, salt. Works with everything.
  • Paprika: smoked paprika, garlic, salt. Good colour, slightly smoky.
  • Parmesan: toss with oil, cook, then toss with grated parmesan the last 2 minutes so it crisps onto the potato.
  • Plain salted: sometimes the best option for kids - the air fryer does enough flavour work on its own.
