Pork chops have a reputation for drying out. In a pan, that reputation is partly earned. In an air fryer, it is not - the circulating heat cooks them evenly without the hot spots that cause pan-fried chops to toughen. A 2.5cm thick chop comes out juicy in the middle with a proper crust on the outside.
Bone-in loin chops (about 2-2.5cm thick) are the ideal air fryer cut. The bone slows the edge closest to it from overcooking, giving you more margin for error. Boneless chops work but need more attention to timing - they dry out faster.
Avoid thin-cut chops (under 1.5cm) in the air fryer - they cook too fast and the outside burns before the inside finishes. If that is all you can find, reduce the cooking time to 8-10 minutes and check early.
Pat the chops dry - this is the same principle as chicken. Moisture prevents crust formation. A basic dry rub works better than a wet marinade for the air fryer:
Rub the seasoning in well on both sides. Let it sit for 10 minutes if you have time, or go straight into the air fryer if you do not.
Preheat the air fryer to 200C / 400F for 3 minutes. Place chops in a single layer. Cook for 6-7 minutes, flip, cook another 6-8 minutes. The internal temperature should reach 63C / 145F - this is the safe temperature for pork and it leaves the meat slightly pink and juicy in the centre, which is correct. Let them rest for 3 minutes before serving.
For bone-in chops: the bone end needs slightly more time. Orient the thickest part toward the centre of the basket where heat is most intense.

For a family of four adults: four chops will need two batches in most air fryers unless you have a 7+ quart model. Run the first batch, rest them loosely tented with foil, run the second. The rested chops stay warm for 8-10 minutes and actually improve as they sit.
For families with young children: one adult chop can be sliced and shared between two young kids. The meat is tender enough to cut easily and mild enough that most children accept it without fuss.
