Roasted chickpeas are one of the easiest snacks to make at home, and thyme's savory, slightly peppery flavor gives them a more grown-up profile than a plain salted version.

Ingredients

  • 2 (15 oz) cans chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme leaves, or 1.5 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the drained chickpeas on a clean kitchen towel and pat them thoroughly dry, rolling them gently to remove loose skins if any come off - dry chickpeas crisp up far better than damp ones.
  3. Transfer the dried chickpeas to a bowl and toss with the olive oil, thyme, garlic powder, salt, and pepper until evenly coated.
  4. Spread the chickpeas in a single layer on a baking sheet, making sure they aren't touching where possible for even crisping.
  5. Roast for 25 to 30 minutes, shaking the pan every 10 minutes, until deeply golden and crisp.
  6. Let cool for a few minutes before serving - they crisp up further as they cool.

Notes

These are best eaten the day they're made, since they soften somewhat in storage. If needed, a few minutes back in a hot oven refreshes their crispness.

Why Drying the Chickpeas Matters

Any residual moisture on the chickpeas turns to steam in the oven, which prevents them from crisping properly. Taking the extra minute or two to pat them dry (and removing loose skins, which also interfere with crisping) makes a real difference in the final texture.

These work well as a standalone snack, scattered over a salad in place of croutons, or served alongside drinks as a healthier bar-snack alternative.

  • Spicy version: Add a pinch of cayenne or smoked paprika along with the thyme for some heat.
