Instructions

  1. Preheat the oven to 425°F (220°C) and place a large baking sheet inside to heat up while you prep the potatoes.
  2. In a large bowl, toss the potatoes with the olive oil, garlic, chopped rosemary, salt, and pepper until evenly coated.
  3. Carefully remove the hot baking sheet from the oven and spread the potatoes out in a single layer, cut side down where possible - starting with a hot pan gives a much better sear than starting cold.
  4. Roast for 30 to 35 minutes, without stirring for the first 20 minutes, until deeply golden and crisp on the bottom. Flip once partway through if you want color on multiple sides.
  5. Season with additional salt to taste right out of the oven, and garnish with fresh rosemary sprigs if desired.
