Rosemary roast chicken has a bolder, more rustic flavor than a tarragon version - where tarragon leans delicate and French, rosemary pushes the whole dish toward something heartier and more Mediterranean, especially paired with lemon and garlic.

Rosemary Roast Chicken with Lemon and Garlic

Ingredients

  • 1 whole chicken, about 4 to 5 lbs
  • 4 tbsp olive oil, plus more for the pan
  • 2 tbsp fresh rosemary, finely chopped, plus 2 whole sprigs
  • 4 garlic cloves, minced, plus 4 whole cloves
  • 1 lemon, zested and halved
  • 2 tsp salt, divided
  • 1 tsp black pepper
  • 1 small onion, quartered
  • 1 cup chicken broth or white wine, for the pan

Instructions

  1. Preheat the oven to 425°F (220°C). Pat the chicken completely dry, inside and out.
  2. In a small bowl, combine the olive oil, chopped rosemary, minced garlic, lemon zest, 1 teaspoon of salt, and the pepper into a loose paste.
  3. Gently loosen the skin over the breast and thighs and rub about two-thirds of the rosemary mixture underneath, spreading it as evenly as possible from the outside.
  4. Rub the remaining mixture over the outside of the skin. Season the cavity with the remaining salt and stuff it with the lemon halves, whole garlic cloves, and rosemary sprigs.
  5. Tie the legs together with kitchen twine and tuck the wing tips under. Place the chicken breast-side up in a roasting pan and pour the broth or wine into the bottom of the pan.
  6. Roast for 1 hour to 1 hour 15 minutes, until a thermometer inserted into the thickest part of the thigh reads 165°F (74°C), tenting with foil if the skin browns too quickly.
  7. Let the chicken rest for 10 to 15 minutes before carving.

Notes

The pan drippings make an excellent base for a quick gravy or pan sauce - strain out the solids, reduce slightly, and whisk in a bit of butter at the end.

Why Rosemary Works Under the Skin

Placing the herb paste directly against the meat lets the flavor baste the chicken from the inside as it roasts, while the skin gets to crisp separately with its own light coating of oil. Variations

  • Spatchcocked: Removing the backbone and flattening the chicken before roasting cuts the cooking time significantly and gives more even browning across the skin.
  • Extra garlic: Roast a whole head of garlic alongside the chicken, halved and drizzled with oil, for a soft, spreadable side.
  • Different herbs: Thyme works well added alongside the rosemary for a slightly more layered flavor.
