Homemade Air Fryer Chicken Nuggets

Making nuggets from scratch sounds like a weekend project. It is not. The prep takes 15 minutes: cut the chicken, dredge it, air fry it. Total time including cooking is under 30 minutes. The result is a nugget with actual chicken texture inside and a proper crispy coating outside - both things that many frozen brands fail to deliver.

Ingredients for 4 Servings

  • 600g chicken breast
  • 80g panko breadcrumbs
  • 30g plain flour
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • Spray oil

Method

Cut the chicken into nugget-sized pieces (about 4cm x 3cm). Set up three bowls: flour seasoned with salt in the first, beaten egg in the second, panko mixed with garlic powder and paprika in the third. Coat each piece in flour (shake off excess), dip in egg, then press into the panko so it sticks on all sides.

Preheat the air fryer to 200C / 400F for 3 minutes. Spray the basket with oil. Place nuggets in a single layer - do not overlap. Spray the tops lightly with oil. Cook for 12 minutes, flipping halfway. They are done when golden brown and the internal temperature hits 75C / 165F.

Coating Variations

  • Parmesan crust: mix 30g grated parmesan into the panko. Richer flavour, kids love it.
  • Cornflake crunch: crush cornflakes instead of panko. Extra crispy, slightly sweeter.
  • Spicy (older kids): add 1/2 tsp cayenne to the panko.

Dipping Sauces

Ketchup and mayo are the obvious choices. For something slightly more interesting: mix 2 tbsp honey with 1 tbsp Dijon mustard for a honey mustard dip. Or 2 tbsp sour cream with garlic powder and chives for a ranch-style dip. Both take 30 seconds and make nuggets feel more special without extra cooking.

Freezer Batch Instructions

This is where homemade nuggets really pay off. Coat all the nuggets as above, place them on a baking tray lined with baking paper, and freeze for 2 hours until solid. Transfer to a freezer bag. Cook from frozen at 200C for 15-16 minutes (flip at 8 minutes). Label the bag with the date - they keep well for 2 months.
