Ghee Popcorn (A Better Movie Night Snack)

A simple ghee popcorn recipe that keeps the popcorn crisp longer than butter would, with a richer, nuttier flavor.

Ghee Popcorn (A Better Movie Night Snack)

Popcorn is one of the simplest possible showcases for ghee - swap it in for regular melted butter and the flavor upgrade is immediate, with the added benefit that ghee won't make the popcorn soggy the way butter's water content can.

Ghee Popcorn

Prep time: 2 minutes | Cook time: 8 minutes | Serves: 2 to 3

Ingredients

  • 3 tbsp ghee, divided
  • 1/2 cup popcorn kernels
  • Salt, to taste
  • Optional: nutritional yeast, smoked paprika, or a pinch of cayenne

Instructions

  1. In a large, heavy-bottomed pot with a lid, melt 1 tablespoon of the ghee over medium-high heat.
  2. Add 2 to 3 popcorn kernels and cover the pot. Once they pop, add the remaining kernels in an even layer and cover again.
  3. Cook, gently shaking the pot every 15 to 20 seconds, until the popping slows to a few seconds between pops, about 3 to 4 minutes.
  4. Remove from heat and let sit, covered, for a minute before transferring the popcorn to a large bowl.
  5. Melt the remaining ghee and drizzle it evenly over the popcorn, tossing to coat.
  6. Season with salt and any optional spices, tossing again to distribute evenly.

Notes

Drizzling the ghee in a thin stream while tossing, rather than pouring it all in one spot, helps it coat the popcorn more evenly rather than pooling at the bottom of the bowl.

Why Ghee Works Better Than Regular Butter Here

Butter's water content can make popcorn slightly soggy, especially if it sits for more than a few minutes after being drizzled on. Because ghee has had its water content removed, it coats the popcorn without introducing that same moisture, keeping the popcorn crisp for longer. It also brings a richer, nuttier flavor that plain melted butter doesn't quite match.

Flavor Variations

  • Cheesy version: Toss with nutritional yeast for a savory, cheese-like flavor without dairy.
  • Spiced version: Smoked paprika, cayenne, or a curry powder blend all work well tossed in along with the salt.
  • Sweet version: A light drizzle of honey alongside the ghee, with a pinch of cinnamon, makes a sweet-savory variation.
