Quick pickled jalapeños bring real heat wrapped in a bright, tangy brine, and they hold up in the fridge for weeks - a considerable upgrade over the jarred version most grocery stores sell, at a fraction of the cost.
Quick Pickled Jalapeños
Prep time: 10 minutes, plus resting | Makes: about 1 pint
Ingredients
- 6 to 8 jalapeños, thinly sliced into rounds
- 3/4 cup white vinegar
- 3/4 cup water
- 1 tbsp sugar
- 1.5 tsp kosher salt
- 2 garlic cloves, smashed
- 1/2 tsp cumin seed (optional)
Instructions
- Pack the sliced jalapeños into a clean pint jar along with the garlic and cumin seed if using.
- In a small saucepan, combine the vinegar, water, sugar, and salt. Warm over medium heat, stirring, until the sugar and salt fully dissolve.
- Pour the warm brine over the jalapeños, making sure they're fully submerged.
- Let the jar cool to room temperature, then seal and refrigerate.
- The jalapeños are ready to eat after a few hours, though the flavor deepens over the next day or two.
Notes
Wear gloves when slicing the jalapeños, or wash your hands thoroughly afterward - the oils that carry the heat can linger on skin and transfer to your eyes uncomfortably if you're not careful.
Adjusting the Heat Level
Leaving the seeds and white membrane in the jalapeño slices keeps more heat in the final pickle, since that's where most of the capsaicin (the compound responsible for chili heat) is concentrated. For a milder version, scrape out the seeds and membrane before slicing.
What to Use Them On
- Tacos and nachos
- Pizza, added after baking for the freshest crunch
- Sandwiches, particularly anything with melted cheese
- Chopped into guacamole or salsa for extra tang and heat
Variations
- Mixed pepper version: Combine jalapeños with sliced serrano or banana peppers for a range of heat levels in one jar.
- Carrot addition: Add a few thin carrot rounds to the jar, a common combination in Mexican-style pickled jalapeños (escabeche).
- Extra garlicky: Increase the garlic for a more pronounced savory note alongside the heat.
